Mal's Blend Non Vintage Shiraz Cabernet- 2010 bottling
Philosophy:
Prior to bottling each david Franz red is settled for a month or so then racked carefully off any solids that may be present. I believe that with red wines made correctly, filtering is an unnecessary process that generally weakens the structure of the wine. To ensure the bottle you buy is not full of sediment I always leave a generous layer of wine on the bottom of the tank. These portions along with a little fresh wine made each year and anything else lying around without a home are gathered together and bunged into big pot to cogitate until bottling. Think a big pot of soup bubbling away on the stove! In the past it was always jealously guarded to be drunk by just a lucky few. Perhaps my heart has grown or my brain has shrunk, either way I've made a very small amount available to those smart enough to snap it up quick. 740(ish) bottles produced and released. So between You, Mal and I... Well I reckon it'll be gone before we know it!!!
Production:
A ‘rolling soup’ blend of predominately Shiraz and Cabernet leftover bits and pieces from 2001 2002 2003 2004 2005 2006 2007 2008 2009 and 2010 put together for our own consumption
Colour:
Vibrant rich red, running the gamut down from the youthful wines contributing bright purple intensity layered over increasingly deep fleshy red notes
Nose:
The nose is immediately filled and caressed with the heady aromas of Glazed Cherries nestled in a potpourri of dried rose petals, which opens to reveal an undercurrent of raspberry over vanilla plum, violets and a base of dark molasses bread.
Palate:
The wine marches assertively onto the tongue without apology or so much as a by your leave, sets up camp and doesn't leave. With a flourish and a grin a silky satin beadsheet is laid down on your tongue. As it makes itself at home out of the backpack comes an incredible array of perfectly ripe (with just a hint of tartness) summer berry fruits. These make way for the more volatile and assertive red stone fruits of cherry and plum before the spearmint and spice over subtle vanilla seed and dark bready yeast characters kick in.
The wine lingers for a ridiculous amount of time with the firm but delightfully fine grained tannins bringing up a stylish rear guard action. Yum bloody yum!!!
